1

Arrival in Sri Lanka and transfer to Jetwing Beach, Negombo for three nights. Being a coastal town, Negombo has earned itself a strong reputation for providing scrumptious seafood in Sri Lanka. This status should come as no surprise considering the town’s strong fishing history and tradition that is still alive and well today. The waters of this coastal town are home to a plethora of marine life, many of which make scrumptious dishes for seafood lovers to satisfy their palettes.

2

Breakfast by the pool side with the Executive Chef Priyantha Weerasingha. After breakfast the Chef will present an Introduction to the spices. Lunch (Sri Lankan rice and curry) at the neighbouring Jetwing Blue. Afternoon at leisure or optional activities include, Ayurveda / Spa treatment and Catamaran boat ride with the hotel resident naturalist.

Evening, talk by Priyantha Weerasingha on “Coconut”. Dinner at Black Coral fine-dining restaurant.

Morning, visit “Lellama” (Fish Market) with the executive Chef. Purchase fish of your own choice and discussion with the chef on variety of signature seafood dishes. Afternoon, cookery class with the chef – Seafood dishes. Evening, at leisure.

After breakfast leave for Jetwing Lighthouse, Galle for three nights. En-route visit Lunuganga, the country home of the renowned Sri Lankan architect Geoffrey Bawa. Meet Nihal Senanayake, the executive chef of Jetwing Lighthouse. Talk by Nihal Senanayake on “Breadfruit & Jackfruit” and lunch at Lunuganga. Evening at leisure and dinner at Cardamom Café.

5

Morning, visit the Galle vegetable and fruit markets followed by Non-communal breakfast. Join the chef for Cooking Class: Rice and Curry (e.g. dhal, chicken curry, a vegetable curry and gotukola sambol). Special southern dinner at a partner boutique hotel in Galle.

After breakfast visit to the neighbouring Jetwing Kurulubedda. Introduction to “rice” followed by Cooking Class with the chef: Milk Rice (Kirri Bath) with Ambul Thiyal, Pollos Curry and Lunu Miris. Enjoy a traditional lunch with additional curries. Visit the local laundry on the riverbank to wash your apron like the dhobis do!
Evening, treat yourself with Mango Passion Cocktail in the Coats of Arms Bar. Dinner among the Rocks at Jetwing Lighthouse.

7

After breakfast leave for Jetwing Warwick Gardens, Ambewela for two nights. Meet the bungalow manager and discussion on “pepper” whilst enjoying Pink Guava & Black Pepper Caipirinha. “Planter’s Roast” dinner (Starter: Nastratium flower salad. Main: Roast lamb, roast potato, Jetwing Warwick own sautéed vegetables and fresh mint raita. Dessert: local goat cheese served with jam. Well paired wines.)

Breakfast at the Warwick Gardens veranda. Guided walk in the gardens, talk by the bungalow manager on common and less common plants, vegetables, fruits and edible flowers.

Cooking Class: Chutney and jam making, Goat cheese making.

Breakfast and high-tea experience in the gardens and leave for Jetwing Vil Uyana, Sigiriya for two nights. En-route visit Tea factory. Evening talk on history of Sigiriya over Arrak & Lime Martini. Dinner at the Apsara restaurant and witness a local dance performance.

10

Breakfast in the paddy-fields followed by cooking class with the executive chef “Claypot Cooking”. Afternoon, safari at Minneriya National Park to witness the gathering of elephants. Enjoy “ginger biscuits and tea” in the company of the herds of elephants.
Evening, talk on “Sri Lanka Wildlife” by expert naturalist over Rose Sparkling Wine. Non-communal dinner downstairs by the pool with live Flute music.

11

After breakfast visit the Sigiriya Rock Fortress and leave for Jetwing Sea, Negombo for three nights. Lunch at a local home en-route to Negombo. Evening, farewell speech by the team of chefs over Pineapple Mojitos. Receive booklet with recipes from the cooking classes along with guest experience photographs. Gala dinner and music.
